螺螄粉為什麼越臭讓人越愛吃?

螺螄粉一直是眾多網紅美食裡面比較有爭議的一款柳州特色小吃,它的臭味不同於同為網紅美食的臭豆腐,臭豆腐的臭味聞起來有一種油炸的香臭味,而且吃習慣了會覺得很香,但螺螄粉不一樣,螺螄粉的臭完全就是一種讓人無法形容的腐臭味道,哪怕是你再喜歡吃但這味道聞起來還是依然的臭氣熏天,而且你會感覺到這臭味會融入到你煮螺螄粉房間的每一個角落久久不能散去。




但這螺絲粉為什麼就是這麼奇怪,明明臭氣熏天吃起來卻又香辣無比,讓人回味無窮,真的是越臭越讓人喜歡吃,這粉雖名為螺螄粉但平時我們吃的螺螄粉裡面可是沒有螺螄的,那為什麼會稱為螺螄粉呢? 螺獅粉廣西人管它叫「嗦粉」發源地在廣西柳州,名為螺螄粉是因為螺螄粉的湯料是用豬骨棒、雞架骨同螺螄一起再加入一些調料精心熬制而成,螺螄肉融入湯汁中起到重要的調味提鮮的作用,這也是為什麼螺螄粉吃起來這麼香的原因,因只取其湯汁所以雖名為螺螄粉但卻看不到螺絲肉。 而螺螄粉的臭味實質上主要來源於粉裡面加的酸筍,這種酸筍主要是用新鮮竹筍通過腌制發酵而成,而發酵後的酸筍會更加有助於吸收和消化,但會散發出來一種不太好聞的腐臭味,這就是為什麼螺螄粉我們吃起來雖香辣入味,湯汁濃郁,但聞起來卻其臭無比原因。




了解了螺螄粉,下面我們來看看螺螄粉怎麼樣煮才好吃,螺螄粉產自廣西柳州,一般我們想吃螺螄粉都只能去超市或網上買方便裝回家自己煮,煮螺螄粉也還是有所講究的,只要這兩個環節做好了,煮出來的螺螄粉湯汁濃郁,香辣Q彈特別好吃,下面就給大家分享一下螺螄粉怎煮才好吃。 好多人煮螺螄粉都會把粉條直接放入鍋里煮等粉條差不多熟了就直接放調料,這樣煮出來的螺螄粉湯汁黏稠米粉味道比較重,吃起來口感不太好,正確的做法是先在加水的鍋中放入米粉,再加入少量白醋(加白醋煮出來的螺螄粉吃起來更加Q彈),煮10分鐘左右撈出。 鍋中重新加入適量水,這時水不要加得太多,(水加多了,湯的味道淡了吃起來就不好吃了)放入煮過的螺螄粉,水開後加入湯料包,酸筍包,配料包煮2分鐘左右就可以把粉連湯一同倒入碗中,這時我們依次加入白醋、紅油和腐竹花生包拌勻即可,還可以根據自己的喜好在裡面加入火腿,蟹柳等食材,這樣煮出來的螺螄粉味道鮮美,臭味濃郁,吃起來特別香。
