What is the best stainless steel for kitchen knives?

There are different types of kitchen knives that are available in the market. It is the material that makes the knives different from each other. Here we shall discuss the type of steel used in the knife and their features.
Carbon steel:
It is been observed after the addition of carbon in the steel, steel becomes harder and sharper than before. It is the feature of the carbon steel that it can be transformed into other shapes like blade. There is one disadvantage of carbon steel that it easily gets rusted. Due to the sharpness of carbon steel, there is need of extra care while handling the knife that contains carbon steel. It is recommended to regularly clean the knife that contains carbon steel otherwise it will easily get rust or corrode. It is been observed that professional chefs do not frequently use the carbon steel knife and give it a rest for one day. They use it on alternate basis so that its performance remains intact.
Stainless steel:
Stainless steel is an alloy that contains different amount of chromium, nickel or molybdenum and carbon. The best quality of stainless steel is that it is resistant to corrosion. Also there is no need of extra maintenance to handle the stainless knife. Their edge remains fine if god quality stainless steel is used in it.It is recommended to use Stainless Steel Knife Set in order to have a better cutting experience. Professional chefs usually use knives made from stainless steel.
