螺螄粉為什麼會臭?原來是因為→

聞起來「臭」、吃起來「香」的螺螄粉,從「小米粉」做成了「大產業」,從傳統特色產品「蝶變」為「網紅食品」。螺螄粉不僅風靡全國,還遠銷20多個國家和地區。那麼臭臭的螺螄粉為什麼會受大眾歡迎呢?

歷史悠久的螺螄粉

螺螄粉是廣西柳州小吃,富含辣、爽、鮮、酸、燙的獨特風味,以發酵的酸筍、花生、油炸腐竹、黃花菜、蘿蔔乾等配料和煮爛螺螄的湯水,加上柳州特有的米粉調和而成。

傳言螺絲粉的歷史最早可追溯至唐朝,甚至與大詩人柳宗元相關。儘管由於歷史久遠的緣故都已經無從考證,但至少可以說明一點,但嗍螺和米粉在柳州傳承悠久。

儘管螺獅粉歷史悠久,但真正從街頭小吃走上全國,其實是在2012年被《舌尖上的中國》播出後,引發火爆效應,螺螄粉固有的「臭味」讓你充滿了話題性,同時螺螄粉的酸、爽、辣更能夠刺激消費者的味蕾,給人一種回味無窮的感覺。

螺螄粉的臭味來自何處

螺螄粉獨一無二的「臭味」,讓不知明的食客望而卻步,但對吃過的人而言,真香!那這股奇怪的味道到底從哪裡來呢?

其實就是螺螄粉裡面腌制酸筍的味道,酸筍是螺螄粉中唯一經過發酵的食材。

發酵過的食物多多少少都有一點獨特的味道。酸筍的味道聞起來確實有點酸臭,因為酸筍在發酵的過程必然要產生這個味道,而這個味道也是螺螄粉的特點。

酸筍的製作過程比較粗放,發酵環境並沒有完全隔絕氧氣,經過需氧菌和厭氧菌的通力合作,筍中的糖類和蛋白質被發酵,轉化為各種氨基酸和有機酸、醛、醇等物質。酸筍中的半胱氨酸和色氨酸被大量消耗,最終產物硫化氫的累積導致了其濃烈的內味兒。經過微生物發酵的食物,由於微生物已經幫人「預先」消化過了,會比原來的食物更容易消化和吸收。在螺螄粉加工過程中,熱辣結合使得各種氣味物質加速揮發,讓人在吃完之後仍餘下繞梁三日的微醺,欲罷不能。

吃螺螄粉千萬不能少了酸筍,這是螺螄粉的「魂」,沒有了酸筍的螺螄粉就變色索然無味,也就不叫螺螄粉了。吃螺螄粉建議第一次少放一點酸筍,慢慢增加量,用不了幾次,你就會愛上螺螄粉的。

發酵的營養

1.提高營養物質吸收率

發酵時微生物分泌的酶能裂解細胞壁,提高營養素的利用程度。如蛋白質變成了更易消化的多肽和氨基酸。

2.合成新營養

微生物還能合成一些B族維生素,特別是維生素B12;在發酵過程中分泌的植物酶,有助於分解植酸,提高人體對鈣、鐵等礦物質的利用率。

3.利於腸道健康

發酵過程中還會產生一些植物性乳酸菌,包括單寧酸、植物鹼等,具有調節腸道的功效。
